Jarvis Estate Cabernet Sauvignon, 2005, WA (12 bottles) RRP: $288 a case

Tasting Notes:
The wine is a dark cherry colour with an unmistakable magenta hue. The nose is floral reminiscent of perfumed violets and the expected Cabernet character of blackcurrant is present as is the cedary notes derived from both fruit and time spent on French oak.
The palate is perfectly balanced with silk-like tannins and subtle acidity. The oak nuances work well with the fruit flavours and the finish is one of elegance and structure. Whilst a remarkable wine now, the Jarvis Estate 2005 Cabernet Sauvignon will benefit from careful cellar maturation for 15 years or more.

Additional Information
In 1965 scientist Dr John Gladstones identified the Margaret River as having natural conditions highly favourable for growing Cabernets. He made particular mention of the small sub-region of Bramley, where Jarvis Estate is today located. The estate is also the home of vignerons Matt & Jackie Jarvis and all of the fruit used in the wine was grown on the home vineyard.

The 2005 Jarvis Estate vintage can only be described as exceptional. Warm sunny days and crisp, cool nights made for ideal fruit ripening conditions. A relatively dry growing season ensured a crop of disease-free fruit. Flavour and acidity levels are at their optimum in this vintage year. The fruit for this wine was machine-harvested in March of 2005 during the cool of night.
